What Is Agave?

In my quest to use less sugar (or none) I often substitute Agave in my recipes. Agave is a low glycemic index sweetener. It is absorbed slowly into the body preventing spikes in blood sugar. It is 25% sweeter than sugar so you use less. It has been used by ancient civilizations for over 5,000 years. It is much more expensive than sugar. It has a lighter taste and mass than honey. I love using it in cooking, though it does change the taste and texture of your food. If you are a sugar addict, agave will not cure that. But it is a good way to get your sweets and still cut back on your processed sugars. I recommend replacing your sugar with agave using half of what the recipe calls for.
